As the offspring of Sauvignon Blanc and Cabernet Franc, the varietal Cabernet Sauvignon is one of the most commonly found wines in the world, and in our cooler Virginia climate, these grapes excel, though in a way that’s distinct from a California Cabernet Sauvignon. We take a classical approach by harvesting from southern facing slopes, giving the grapes extended sun exposure. This highlights the dark cherry and violet aromatics while preserving the tannins and acidity this varietal is known for. The extended maceration of the skins and long barrel aging help to enhance this vintages’ flavors of black currant, blueberry and lavender. Easily one of our best pairing wines.
