Costa Vino 2018
Introducing Costa Vino 2018: Pippin Hill's first méthode classique sparkling wine! A nod to our sister property, Costa, in Charleston, SC, this limited release came to life from Chardonnay grapes harvested early for high acidity and 3 years of riddling before disgorgement. Fans of Pippin Hill's Blanc de Blanc and Sparkling Rosé might discover a new favorite among Costa Vino's aromas of lime zest, apricot, and elderflower, and layered, creamy flavors of apricot, white peach, nectarine, and chicory. The lean and bright finish lends these fine bubbles to any occasion!
Nose: lime zest, apricot, elderflower, slate
Palate: apricot heavy, white peach, nectarine, chicory
Finish: light body, medium dryness, fine bubbles
Varietal: 100% Chardonnay
Food Pairing: caviar, double or triple cream cheeses, salted nuts, pasta or risotto with cream or mushroom sauces, shellfish, fish and chips, smoked salmon, cheesecake, berries, shortbread cookies, toffee, salted caramels
Sparkling Rose 2021
Our Champagne-style Sparkling Rosé features both floral and fruity characteristics on the nose and palate with a finish that is crisp and slightly dry. Those red varietals lucky enough to find their way into our Sparkling Rosé are treated like our white wines: fermented and aged in stainless steel before receiving carbonation. Truly one of our most popular wines, this Sparkling Rosé is worthy of celebrating any special occasion, including (sometimes) the fact that it’s only Tuesday.

Finish: light body, medium dryness
Varietals: 50% Cabernet Sauvignon, 42% Cabernet Franc, 6% Merlot, 2% Chambourcin
