Fireside Trio
Chardonnay Reserve 2022
Our Reserve Chardonnay is just that -- the best of the best, reserved just for you. Made from only the highest quality of the Chardonnay grapes we grow, and with inspiration from Burgundy winemaking techniques, this beauty is then aged 9 months in oak (57% of that in French oak, if you’re curious). All to say, our Reserve Chardonnay lives up to the label, with complex aromas, and a fruitiness balanced with hints of poached pear and brioche. Balance here is key, and this one hits it.
Nose: nutmeg, ginger, golden raisin, beeswax, honeysuckle
Palate: poached pear, brioche, caramelized leeks, cantaloupe, yellow apple
Finish: light oak, high acid, medium body, light dryness
Varietal: 100% Chardonnay
Bin 21 2019
How better to finish a meal or extend an evening celebration than with a sweet, deep port? Our Bin 21 is just that. Rich with a balanced sweetness, it features black currant, dried orange and fig, and semi-sweet chocolate. These flavors come from the interaction of the oak and the brandy used for fortification. Easy to sip and perfect for fireside, the port is our go-to for a cold winter’s night, or really, anytime we feel festive and slightly indulgent.
Nose: stewed cherries, toffee, rhubarb, clove, sage
Palate: semisweet chocolate, black currant, dried orange and fig, sour cherry, tea leaves
Finish: light acidity, slight oak, medium tannins
Varietal: 89% Chambourcin, 11% brandy
Bundoran Blue 2019
The 2019 Bundoran Blue continues the tradition as a tribute to the Bundoran Farm community where Pippin Hill resides while also paying homage to the signature color palette of our sister event company, Easton Events. And despite the “blue” on the label, it is our signature, and ever-soothing, red blend. Rich up front with plum, blueberry, and traces of white pepper, the body remains grippy which emphasizes the dark fruit notes with hints of red beet. The finesse of the finish highlights the acidity while lingering mushroom notes make this one of our best food wines. Let it breathe, breathe deeply yourself, then sit back and enjoy.
Nose: blueberry, clay, potting soil, star anise, dill
Palate: plum, red beet, white pepper, mushroom
Finish: medium acid, medium tannin
Varietal: 34% Merlot, 33% Petit Verdot, 33% Cabernet Franc
